Tasting Notes

This sparkling is a beautiful blend of Pinot Noir (53%) and Chardonnay (47%). The fruit was sourced from three different vineyard blocks, each harvested to optimise fruit and acid balance. The palate delivers welcoming crunchy apple, citrus and oyster shell.

In keeping with traditional production methods, this wine was aged for an extended period on lees – 48 months – which adds power to the flavour and creates a creamy, fine, mousse-like finish.
